Strawberries and Cream Scones Story


– 2 C gluten-free all-purpose flour – 1/2 tsp xanthan gum – 1/2 C granulated sugar – 1 Tbsp baking powder – 1/8 tsp fine sea salt – 1/2 C (1 stick) unsalted butter, cut into cubes and very cold – 1 large egg – 1/2 C sour cream – 1 1/2 tsp vanilla extract, divided – 1 C strawberries, diced or quartered – 1/2 C confectioners sugar – 1 1/2 tsp milk or cream

Pre-heat oven to 400 degrees and line a baking sheet with parchment paper or silpat-type non-stick liner.



Sift flour, xanthan gum, sugar, baking powder and salt together in a large bowl. Sift to combine and set aside.
