Gluten Free Key Lime Pie Bars

Gluten Free Key Lime Pie Bars are a variation of the traditional scrumptious Key Lime Pie. These bars have a fantastic tangy, thick filling with a homemade buttery shortbread crust topped with some homemade whipped cream and key lime zest that really pulls all the flavors together.

Ingredients

For the Crust

  • 1 cup gluten free flour with xanthan gum
  • 1/3 cup powdered sugar
  • ½ cup butter softened

For the Filling

  • 4 large eggs
  • 1 14 oz can sweetened condensed milk
  • 2/3 cup key lime juice

To Serve

Instructions

  • Preheat oven to 350º F and line an 8x8 baking pan with parchment paper and spray with non-stick spray.
  • Combine the crust ingredients and mix until combined. Press the dough into the bottom of the prepared baking pan, spreading it evenly across the bottom. Bake for 10 minutes.
  • While the crust is baking, use a whisk or hand mixer to beat the filling ingredients together in a medium bowl.
  • Pour the filling over the warm crust. Return to oven and bake for an additional 15-20 minutes or until filling is just set.
  • Remove from oven and cool to room temperature on a wire rack then refrigerate and chill for at least 2 hours.
  • To serve, garnish with freshly grated lime zest and cut bars into 16 pieces. Top key lime pie bars with homemade whipped cream, if desired.
  • Store Key Lime Pie Bars in the refrigerator for up to 5 days.
