Ingredients

For the Brownies

  • 1 box King Arthur Gluten Free Brownie Mix
  • 1/2 cup vegetable oil or melted butter
  • 2 large eggs
  • 2 tablespoons water

For the Cheesecake Filling

  • 8 oz. cream cheese room temperature (block cream cheese)
  • 1/4 cup granulated sugar
  • 1 large egg room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • pinch of fine sea salt

Instructions

  • Preheat oven to 350 degrees F. Spray a 9x9 inch square baking pan with nonstick spray and line with parchment paper, leaving enough overhang to use as a sling to pull the brownies out of the pan.
  • In a large bowl, prepare the brownie mix as directed. Then set aside.
  • Add the cream cheese and sugar to a bowl of a stand mixer fitted with the paddle attachment. Beat until smooth and creamy.
  • Add the egg, vanilla, and salt. Beat until well combined.
  • Remove 1/2 cup of the brownie batter and set aside. Transfer the remaining brownie batter to the prepared baking pan. Carefully spread the cheesecake filling over the brownie layer.
  • Top with the remaining brownie batter and swirl over the cheesecake layer. Bake for 30 minutes at 350 degrees.
  • Cool completely before slicing and refrigerate until ready to serve.
