Gluten Free Cheesecake Brownies

When I worked in a coffee and donut shop (my first job as a teen!), my favorite thing we sold, other than the iced coffee, was the cheesecake brownies. They were huge and insanely delicious.

Cheesecake brownies have always been a recipe I’ve wanted to recreate as a gluten free brownie recipe and I’m not sure why I waited so long. I’ve got loads of gluten free brownies already on my website, so cheesecake brownies HAD to be next!

What You Need To Know About This Easy Cheesecake Brownie Recipe

While I usually make my brownies from scratch, I took a shortcut today and used a gluten free brownie mix as the brownie base. King Arthur has the best brownie mix by far and it’s my go-to when I want to make a batch of brownies quickly.

How to Make a Box Brownie Mix Better

As good as this gluten free brownie mix is, there’s always room to add a few things to make a box brownie mix better. In this case, it’s totally possible to improve upon perfection!

Adding a cheesecake filling, chocolate ganache, candy/mix-ins, or topping with buttercream frosting is the perfect way to elevate a brownie.

Equipment Needed to Make Cream Cheese Brownies

  • Mixing Bowl
  • Whisk, Spatula, and Mixing Spoon
  • Small Offset Spatula (optional)
  • 9×9 Square Baking Pan
  • Parchment Paper
  • Stand Mixer or Hand Mixer (for the cheesecake filling)
  • Measuring Cups and Spoons
  • Cooling Rack

How to Make Cheesecake Brownies

Step 1. Preheat oven to 350 degrees F. Then, spray a 9×9 inch square baking pan with nonstick spray and line with parchment paper, leaving enough overhang to use as a sling to pull the brownies out of the pan.

Step 2. In a large bowl, prepare the brownie mix as directed. Then set aside.

Step 3. Add the cream cheese and sugar to a bowl of a stand mixer fitted with the paddle attachment. Beat until smooth and creamy.

Step 4. Add the egg, vanilla, and salt. Beat until well combined.

Step 5. Remove 1/2 cup of the brownie batter and set aside. Transfer the remaining brownie batter to the prepared baking pan. Carefully spread the cheesecake filling over the brownie layer.

Step 6. Top with the remaining brownie batter and swirl over the cheesecake layer. Bake for 30 minutes at 350 degrees.

Step 7. Cool completely before slicing and refrigerate until ready to serve.

Tips for Making Cheesecake Brownies

  • Be sure to use block cream cheese. Whipped cream cheese or cream cheese from a tub will be too soft.
  • For an ultra-smooth cream cheese filling, make sure your cream cheese and egg are at room temperature. The egg will incorporate better and your cream cheese will be lump-free.

Ingredients

For the Brownies

  • 1 box King Arthur Gluten Free Brownie Mix
  • 1/2 cup vegetable oil or melted butter
  • 2 large eggs
  • 2 tablespoons water

For the Cheesecake Filling

  • 8 oz. cream cheese room temperature (block cream cheese)
  • 1/4 cup granulated sugar
  • 1 large egg room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • pinch of fine sea salt
