These gluten free peanut butter blondies are meant for true peanut butter lovers. They’re soft, chewy bars flavored with brown sugar, vanilla, and full of chopped peanuts, creamy natural peanut butter, and studded with peanut butter chips.

Ingredients

  • 1/4 C Nutiva palm shortening or butter
  • 1/2 C natural peanut butter
  • 1 large egg
  • 1/2 C light brown sugar packed
  • 2 tsp vanilla extract
  • 1 1/4 C all-purpose gluten free flour
  • 1/2 tsp xanthan gum
  • 1/2 C granulated sugar
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1/2 C peanut butter chips
  • 1/4 C chopped peanuts

Instructions

  • Preheat oven to 350 degrees and line an 8x8 inch baking dish with parchment paper.
  • In a large microwave safe bowl, add the shortening (or butter) and melt in the microwave. Stir in the peanut butter. Whisk in the egg, brown sugar, and vanilla.
  • Add the flour, xanthan gum, granulated sugar, baking powder, baking soda, and salt. Stir well to combine - mixture will be on the drier side but should be moist enough so that all the dry ingredients are mixed in.
  • Stir in the peanut butter chips and chopped peanuts and then transfer the dough to the prepared baking pan.
  • Bake at 350 degrees for 22-25 minutes. Bake on the low end of the baking time for gooier blondies, bake longer for firmer blondies. Cool completely before cutting. Store in an airtight container.

Notes

Peanut butter chips are not dairy free. Omit to make these dairy free or sub with extra peanuts or dairy free chocolate chips.
