Gluten Free Peanut Butter Blondies

It’s been a while since I posted a straight up peanut butter recipe and I thought these gluten free peanut butter blondies would fit the bill nicely. They’re a slight variation of the brown sugar blondies with mini M&M’s that I shared almost 2 years ago.

Side note, where has the time gone?!

Peanut butter has been a staple ingredient for many recipes here. I mean, you really can’t go wrong with peanut butter. My chocolate peanut butter bars, peanut butter cookie pie, peanut butter cookie cups, chocolate peanut butter banana oatmeal smoothie, or peanut butter banana oatmeal smoothie just wouldn’t be the same without our beloved pb!

These blondies have three layers of peanut flavor going on for the ultimate peanut butter treat. Not only is there a healthy dose of naturally, creamy peanut butter, they’re also filled with bits and pieces of chopped peanuts and peanut butter chips.

For completely dairy free, leave out the peanut butter chips and sub with extra peanuts or even dairy free chocolate chips. Also, let’s talk about that peanut butter!

Gluten Free Peanut Butter Blondies

Cook Time: 23 minutes
Total Time: 38 minutes

These gluten free peanut butter blondies are meant for true peanut butter lovers. They’re soft, chewy bars flavored with brown sugar, vanilla, and full of chopped peanuts, creamy natural peanut butter, and studded with peanut butter chips.

Ingredients

  • 1/4 C Nutiva palm shortening (or butter)
  • 1/2 C natural peanut butter
  • 1 large egg
  • 1/2 C light brown sugar, packed
  • 2 tsp vanilla extract
  • 1 1/4 C all-purpose gluten free flour
  • 1/2 tsp xanthan gum
  • 1/2 C granulated sugar
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1/2 C peanut butter chips
  • 1/4 C chopped peanuts

Instructions

  1. Preheat oven to 350 degrees and line an 8x8 inch baking dish with parchment paper.
  2. In a large microwave safe bowl, add the shortening (or butter) and melt in the microwave. Stir in the peanut butter. Whisk in the egg, brown sugar, and vanilla.
  3. Add the flour, xanthan gum, granulated sugar, baking powder, baking soda, and salt. Stir well to combine - mixture will be on the drier side but should be moist enough so that all the dry ingredients are mixed in.
  4. Stir in the peanut butter chips and chopped peanuts and then transfer the dough to the prepared baking pan.
  5. Bake at 350 degrees for 22-25 minutes. Bake on the low end of the baking time for gooier blondies, bake longer for firmer blondies. Cool completely before cutting. Store in an airtight container.

Notes

Peanut butter chips are not dairy free. Omit to make these dairy free or sub with extra peanuts or dairy free chocolate chips.

i pretty much love peanut butter anytime, anyway! i eat it straight out of the jar a lot, but also love it on top of oatmeal, bananas, pancakes, etc!
