It’s been a while since I posted a straight up peanut butter recipe and I thought these gluten free peanut butter blondies would fit the bill nicely. They’re a slight variation of the brown sugar blondies with mini M&M’s that I shared almost 2 years ago.
Side note, where has the time gone?!
Peanut butter has been a staple ingredient for many recipes here. I mean, you really can’t go wrong with peanut butter. My chocolate peanut butter bars, peanut butter cookie pie, peanut butter cookie cups, chocolate peanut butter banana oatmeal smoothie, or peanut butter banana oatmeal smoothie just wouldn’t be the same without our beloved pb!
These blondies have three layers of peanut flavor going on for the ultimate peanut butter treat. Not only is there a healthy dose of naturally, creamy peanut butter, they’re also filled with bits and pieces of chopped peanuts and peanut butter chips.
For completely dairy free, leave out the peanut butter chips and sub with extra peanuts or even dairy free chocolate chips. Also, let’s talk about that peanut butter!
There’s a new favorite peanut butter in town: Naturally More Peanut Butter. It’s not just any peanut butter though. It’s an all-natural peanut butter that’s infused with probiotics and high in fiber from the addition of flax.
Basically, it’s a super peanut butter. It’s what makes these gluten free peanut butter blondies extra special. Not to mention they’re studded with all those chopped peanuts and peanut butter chips. Those are quite nice too!
That addition to of flax and probiotics to the peanut butter though? Makes you kind of feel like you’re eating a health food when you’re eating these blondies. (You’re not really but it’s nice to pretend). Eat the peanut butter straight from the jar with a spoon and then you can call it a healthy snack!
BUT, hello peanut butter lovers, there’s more. I know, how can you get better than peanut butter blondies with ALL THE PEANUT BUTTER goodness? A giveaway, that’s how! One lucky reader will win a three-pack of Naturally More’s go-squeeze nut butters.
The three nut butters included are the Organic Valencia Peanut Butter with Probiotics and Flax (which I’ve featured in this recipe), Roasted Almond Butter with Probiotics and Flax, and Chocolate Hazelnut Spread with Probiotics and Flax – all of which are vegan, gluten free, and non-GMO. You can enter the giveaway via the Rafflecopter form below the recipe. Good Luck!
In the meantime, make yourself and the peanut butter lovers in your life a batch of these gluten free peanut butter blondies. They will thank you x10. Enjoy!

- 2 tsp vanilla extract
- 1 1/4 C all-purpose gluten free flour
- 1/2 tsp xanthan gum
- 1/2 C granulated sugar
- 1/2 tsp baking powder
- 1/8 tsp baking soda

- 1/4 C chopped peanuts
- Preheat oven to 350 degrees and line an 8x8 inch baking dish with parchment paper.
- In a large microwave safe bowl, add the shortening (or butter) and melt in the microwave. Stir in the peanut butter. Whisk in the egg, brown sugar, and vanilla.
- Add the flour, xanthan gum, granulated sugar, baking powder, baking soda, and salt. Stir well to combine - mixture will be on the drier side but should be moist enough so that all the dry ingredients are mixed in.
