- 1 C coconut milk
- 1 C frozen peaches
- 1 C fresh baby spinach packed
- 1 clementine peeled with as much of the white removed as possible
- 1 tsp pure vanilla extract
- 1 Tbsp raw honey or more to taste
- 1/4 -1/2 C water
Add the coconut milk, peaches, spinach, vanilla and honey to a blender. Blend a few minutes until smooth. Add the water as necessary to reach desired thickness.
Serve immediately and enjoy!
For a creamier smoothie, skip the water and use more coconut milk.
