Ingredients

  • 8 small or 6 medium red apples peeled and cored (such as Gala)
  • 1/4 cup agave syrup see notes
  • 1/4 cup light brown sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon unsalted butter melted
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 cup pecans whole, raw

Instructions

  • Preheat the oven to 350 degrees. Grease a 9 x 6-inch or 8x8 inch baking dish.
  • Peel and core apples then cut into thin slices. Transfer the apples to the baking dish. Add spices, lemon juice, agave syrup, butter, vanilla extract, and brown sugar on apples. Toss to combine.
  • Cover the baking dish with foil then bake in the oven for 35 minutes. Remove from the oven and remove foil. Stir with a wooden spoon, add the pecans and bake for an additional 25 - 30 minutes.
  • Remove from the oven and let cool down for about 10 minutes. Serve with vanilla ice cream or homemade whipped cream and a drizzle of salted caramel sauce.

Notes

  1. Use coconut oil in place of the butter for dairy-free and vegan baked apples.

  3. 1/4 cup light brown sugar + 1 tablespoon water can be used in place of the agave syrup.
