Gluten Free Cookies and Cream Rice Krispie Treats

Personally, I love Cookies and Cream! My gluten free Cookies and Cream Cake and gluten free Cookies and Cream Donuts have been super popular so I know I’m not alone. That classic chocolate and vanilla pairing is TOO GOOD to resist!

I’ve got a million ideas for Cookies and Cream inspired desserts but today, we’re focusing on one – Cookies and Cream Rice Krispie Treats. They’re adapted from my regular Gluten Free Rice Krispies Treats and they are addictingly delicious!

I also love making different flavored Rice Krispie Treats. Festive Rice Krispie Treats are great for any occasion – just use different sprinkles, colored chocolate, or toppings to suit different occasions.

Are Rice Krispie Treats Gluten Free?

Store-bought Rice Krispie Treats made by Kellogg’s are not be gluten free. While there are a couple brands of gluten free marshmallow treats on the market, homemade is ALWAYS better!

Cookies and Cream Rice Krispie Treat Ingredients

  • Gluten Free Rice Cereal – I use One Degree Organics Sprouted Brown Rice Crisps
  • Chocolate Sandwich Cookies – there are so many brands of gluten free chocolate sandwich cookies available now! Our personal favorites are Gluten Free Oreos (yes, they’re the real deal!), Goodie Girl Chocolate Creme Sandwich Cookies, and Kinnikinnick KinniTOOS Gluten Free Chocolate Sandwich Cream Cookies.
  • Mini Marshmallows – I prefer using mini marshmallows when making marshmallow treats because they melt more consistently. I use Dandies, which are gluten free and vegan.
  • Salted Butter – yes, salted butter! I love using high-quality salted butter in no-bake desserts that don’t typically call for salt. It doesn’t make the bars salty at all, it just really brings out the flavors of the other ingredients and balances out the sweetness.
  • Pure Vanilla Extract – please don’t use imitation vanilla extract here, it will give too much of an artificial flavor. You can easily make your own vanilla extract with just 2 ingredients. It makes great gifts too!

Equipment Needed to Make Homemade Rice Krispie Treats

  • Large Pot – 6 cups of cereal is a lot to stir so you want to use a large pot to make these.
  • Silicone Spatula – marshmallows are super, super sticky. My tool of choice is a silicone spatula to get these out of the pot and pressed into the pan.
  • 9×9 Square Pan – a 9×9 Square Baking Pan makes nice, thick rice crispy treats. You can use a 9×13 pan for thinner treats. 
  • Parchment Paper or Aluminum Foil – to get your bars out of the pan in one piece for cutting, line your pan with parchment paper or aluminum foil that has been lightly sprayed with non-stick spray.

How to Make Cookies and Cream Rice Krispies Treats

Step 1. Line a 9×9 inch pan with aluminum foil or parchment paper and spray with non-stick spray.

Step 2. In a medium pot, melt the butter over medium-low heat. When the butter is melted, reduce the heat to low and add 5 cups of the mini marshmallows. Stir frequently until the marshmallows are melted.

Step 3. Remove from the heat and stir in the vanilla extract and the remaining 1 cup of mini marshmallows. Stir to melt the marshmallows a bit (chunks of marshmallow are ok) then stir in the gluten free crispy rice cereal and the 14 crushed chocolate sandwich cookies.

Step 4. When all of the cereal and cookies are coated with the melted marshmallow mixture, transfer to the prepared pan.

Step 5. Let them sit in the pan to cool for a minute or two then use a spatula or your hands to press into the pan. (I find that spraying my clean hands with non-stick works best.)

Step 6. While the marshmallow treats are cooling, melt the white chocolate chips in the microwave. Stir in the vegetable oil if needed. You want the melted white chocolate to be a pourable consistency.

Step 7. Once the chocolate is melted, pour over the Rice Krispie Treats and use an offset spatula to spread evenly over the entire pan. Immediately sprinkle the top of the white chocolate with the remaining 6 crushed chocolate sandwich cookies and press them into the white chocolate. Cool completely then cut into 16-20 squares.

Tips for Making Gluten Free Rice Krispies Treats

  • Use a little water or non-stick spray – I find that spraying my clean hands with non-stick spray or wetting them with a small amount of water works best for pressing the marshmallow treats into the pan. It keeps the gooey cereal from sticking to everything!
  • Use fresh marshmallows. Older or stale marshmallows won’t melt well and have the tendency to over-cook when you’re trying to melt them and that will cause your Rice Krispie treats to be hard instead of soft and gooey. The more air in the bag of marshmallows, the better!
  • Don’t melt the marshmallows on high heat to melt them faster. For the perfect texture, melt your marshmallows low and slow.
  • Add more oil to the melted white chocolate (1/2 teaspoon at a time) as needed. The oil will help thin the chocolate to make it pourable. Vegetable shortening can also be used in place of the oil.

Notes

  1. Kellogs Rice Krispies are not gluten free in the US. I recommend using Erewhon Crispy Brown Rice Cereal, One Degree Organics Sprouted Brown Rice Crisps, or Barbara’s Organic Brown Rice Crisps.
  2. There are several brands of gluten free Chocolate Sandwich Cookies available. I prefer Gluten Free Oreos, Kinnikinnick Kinni-Toos, or Goodie Girl Gluten Free Chocolate Creme Cookies.
  3. This has a thin layer of white chocolate on top and IMO, is just enough. However, if you want a thick layer of white chocolate, feel free to double the amount of white chocolate used.
  4. Store leftovers in an air-tight container at room temperature for up to 3 days. Leftovers can also be frozen for up to 2 months.
