There’s nothing better than fresh summer peaches at their prime. They’re sweet, soft, juicy, and just perfect.

August is peek peach season here in New England so this is the time of year when I stock up on them to bake all the peach desserts and breads like Gluten Free Peach Cobbler, Gluten Free Peach Shortcake, and Blackberry Peach Bread from The Gluten Free Quick Breads Cookbook.

When you macerate peaches, the sugar helps pull the juices from the fruit. It creates a sweet, syrupy juice that slightly softens the peaches. Whatever dessert you’re serving these peaches with, make sure you drizzle that peach syrup on top!

Macerated Peach Ingredients

  • Peaches – fresh, ripe peaches are the only kind of peach to use here. You just won’t get the same results with frozen peaches.
  • Sugar – I use granulated sugar but caster sugar would also work great. Caster sugar is finer than granulated sugar but not as fine as powdered sugar.
  • Lime Juice – this is optional but highly recommended. The lime juice helps keep the peaches from browning too quickly and the acid also helps to balance the sweetness. It’s a combo I use in my Peach Daiquiri recipe.

How to Macerate Peaches (Visual Instructions)

Tips

  1. Use fresh, ripe peaches. Underripe peaches will not peel well and won’t be soft and sweet.
  2. Don’t use mealy peaches – the texture will be very unappealing. Keep your peaches at room temperature until they’re ripe to prevent mealy peaches.
    • Mealy peaches occur when unripe peaches are refrigerated and then brought to room temperature to ripen.
