No-Bake Chocolate Chip Breakfast Balls
Today’s recipe is a really fun one: no-bake chocolate chip breakfast balls! This recipe is straight from The Easy Gluten Free Cookbook, which is NEW from my friend Lindsay of Veggie Balance.

This cookbook has it all: breakfast, soup + salad, sides + snacks, main dishes (with beef, pork, poultry, fish, vegetarian, AND vegan!), desserts, and even sauces + dressings. Plus their main focus is on being EASY – exactly what you need at the end of a day during a busy week.

I chose to make these no-bake chocolate chip breakfast balls because these are right up my family’s alley with peanut butter and chocolate. There’s also similar to my Chocolate Coconut Energy Bites, which my family already loves. These also have very few ingredients in them and they are SO easy to make! One bowl, minimal mixing, and just a little bit of chill time and rolling.
They’re great to have on hand for busy mornings, just pair them with some fresh fruit and maybe a high-protein yogurt and you’re good to go! My kids and husband like these for lunches and snacks too. I can already tell this is going to be a recipe we’re going to be making again and again.

The other recipes in the book look really good too. Plus, if you love Mexican flavors, you’ll absolutely fall in love with this cookbook. There are quite a few Mexican-inspired recipes here (breakfast tacos, Mexican Lasagna, Enchilada Stuffed Portabellas, Black Bean Nachos, and SO MANY MORE). And if you don’t love Mexican food, there are LOTS of recipes here for you too – so many classics re-made with a bit of a healthier twist.
Many of the recipes also only call for one pan/pot, have minimal ingredients, and can be prepared in 30 minutes or less. PERFECT! I really think you’re going to love this one as much as I do!

No-Bake Chocolate Chip Breakfast Balls
Ingredients
- 1 cups gluten free certified rolled oats
- 1/2 cup peanut butter
- 1/2 cup roasted salted peanuts
- 1/2 cup mini chocolate chips I used dairy free
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
- pinch of fine sea salt
Instructions
- In a medium bowl, combine the oats, peanut butter, peanuts, chocolate chips, honey, vanilla extract, and salt and mix well.
- Cover and refrigerate for 20 to 30 minutes.
- Form the balls by scooping a heaping tablespoon of the mixture and rolling it between your palms. (makes 12)
- Store in an airtight container in the fridge for up to 5 days.
