Hello coconut lovers, I’m back with another delicious coconut recipe to satisfy your sweet tooth! Todays recipe is a mashup of two recipes already on the blog – my Fudgy Gluten Free Brownie Recipe and the simple Coconut Frosting recipe I posted last week.
You guys, when chocolate and coconut come together, magical things happen. I’m a big, big fan. Which, I’m guessing you’ve already assumed since there are so many chocolate and coconut recipes here.

How to Make Gluten Free Brownies with Coconut Frosting
Step 1. Make the brownies then cool them completely.
Step 2. Make the Coconut Frosting recipe.
Step 3. Spread the frosting on the brownies in a nice, even layer. Then top with toasted coconut or coconut chips.
Step 4. Chill the brownies in the fridge or freezer for 15-30 minutes (or until ready to serve) then cut into squares. You can skip the chilling time but cold brownies are easier to cut cleanly like you see in the picture.
Tips for Making This Gluten Free Brownie Recipe
- You can double the brownie recipe to make a full 9×13 pan and make the full frosting recipe. OR you can make the standard 9×9 brownie recipe and halve the frosting recipe. I highly recommend doubling the brownies!
- If you double the brownies, bake them for 30-35 minutes.
- To get the nice, clean slices you see in the photos, freeze the brownies for 10-15 minutes or refrigerate the brownies for about 30 minutes before cutting.

Gluten Free Brownies with Coconut Frosting
Ingredients
- 1 1/4 cup granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1/2 cup all-purpose gluten free flour See Notes
- 1/4 teaspoon xanthan gum
- 1/8 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 Tablespoon cornstarch
- 2 large eggs cold
- 4 Tablespoons unsalted butter melted and cooled to room temperature
- 1/3 cup avocado oil or canola oil
- 1 1/2 teaspoons pure vanilla extract
- 2 Tablespoons water cold
- 1/2 batch Coconut Frosting
- 1/2 cup toasted coconut or coconut chips
Instructions
- Preheat oven to 325 degrees and line a 9x9 inch metal baking pan with parchment paper.
- In a large bowl, whisk together the sugar, cocoa powder, flour, xanthan gum, baking soda, salt, and cornstarch.
- Make a well in the center and add the eggs. Beat the eggs and mix in the butter, oil, vanilla extract, and water. Mix until the dry ingredients are incorporated.
- Transfer the batter to the prepared pan and bake at 325 degrees for 22-25 minutes. Cool completely in the pan before frosting.
- Top the completely cooled brownies with the coconut frosting and toasted coconut. Slice into 16 pieces and serve at room temperature.
Notes
- I use my Nightshade Free Gluten Free Flour Blend in this recipe. If you use a flour blend that already contains xanthan gum, omit the amount called for in this recipe.
- If you like a firmer, more well-done brownie, you can bake them a little bit longer.
- The frosted brownies freeze well, just leave off the toasted coconut on top. Slice into individual pieces before freezing. Defrost at room temperature and top with toasted coconut before serving.
- Refrigerate the frosted brownies for 30 minutes before before slicing if you want nice clean cuts.
