Learn how to make Simple Syrup with Rosemary! Flavored simple syrup enhances drinks (alcoholic and non-alcoholic) and can even be used to flavor and moisten desserts like gluten free cake.
If you don’t want your simple syrup flavored with rosemary, you can easily skip that step for a plain simple syrup or sub it with a vanilla bean for a Vanilla Simple Syrup.

This rosemary simple syrup is also great for making sugared cranberries and rosemary. I used it to decorate my Gluten Free Gingerbread Cake and it was gorgeous!

- Granulated Sugar
- Water
- Fresh Rosemary

- Stainless steel saucepan
- Wooden spoon
- Funnel
- Glass bottle with a lid or a mason jar
How to Make Simple Syrup with Rosemary
Step 1. In a saucepan over medium heat, combine the water and sugar. Cook, stirring often until the sugar is completely dissolved.
Step 2. Remove from heat and add the rosemary sprig to the saucepan. Allow to cool completely, then discard the rosemary.
Step 3. Pour the simple syrup into a bottle with a lid with a tight seal, or another airtight container. I like to store mine in a mason jar.
Tips for Making Simple Syrup
- Keep an eye on your simple syrup when you’re making it, you don’t want to walk away because you don’t want the sugar to cook too long.
- Cook the simple syrup just until the granulated sugar is completely dissolved.
- This simple syrup recipe can be scaled up or down as needed. Just be sure to use equal parts water and sugar.

Rosemary Simple Syrup
Ingredients
- 1 cup granulated sugar
- 1 cup water
- 1 - 2 sprigs fresh rosemary
Instructions
- In a saucepan over medium heat, combine the water and sugar. Cook, stirring often, until the sugar is completely dissolved.
- Remove from heat and add the rosemary sprig to the saucepan. Allow to cool completely, then discard the rosemary.
- Pour the simple syrup into a bottle with a lid, or another airtight container.
- Use in beverages such as cocktails or mocktails. This simple syrup can also be used to make sugared cranberries and sugared rosemary.
Notes
- Store your simple syrup for up to one month in the fridge.
- Be sure to remove the pan from the heat completely before adding the rosemary to the simple syrup. Rosemary will turn black if cooked, so you’ll want to steep it in the liquid without continued heat.
- To make a larger batch of simple syrup, you can double or triple this recipe. Keep in mind that simple syrup should maintain a 1:1 water/sugar ratio.
